Retreat Options

Hello There!  
I wanted to let you know of a couple of retreat options coming up!  

Location for all the retreats listed below: 

Heber, Utah

These are the following dates and retreats options coming up!

SEPTEMBER 4 - 7 - Bring your own projects, spend the weekend at the adorable Heber House completing all those unfinished projects without the interruption of husbands, children, pets or whatever prevents you from staying focused!  Meals are on your own (we all take turns preparing a meal for the other guests, you won't do this alone, you'll have help!) and we have a few meals out in town at the delicious local restaurants.  Snacks & Surprises!
Cost: $165 with $25 returned if house is left clean and tidy - Room for 12 


August 28 - August 31, 2014
Enjoy staying at the beautiful Heber House which is close to Midway where the annual Swiss Days Event takes place on Friday, August 29 - Saturday, August 30th.  This is a shop-til-you-drop weekend...local hotels in Midway are running $200 per night so this is a great deal for 4 days/3 nights!  Bring a friend, shop at Swiss Days and take in the local sites, eateries and make sure to stop by the Heber Artisan Dairy!  They have the BEST cheese around!  You can choose to eat at the local restaurants or come back and cook at the Heber House!  Heber and Midway have so much to offer as far as activities go!  Shop as long as you want and come back to relaxing surroundings at the Heber House, catch a nap and start all over the next day!
Cost: $165 with $25 being returned if the house is left clean & tidy!  
Room for 12 guests, two beds to a room so bring a friend!

November 6 - 9, 2014
This is a fully hosted retreat!  That means all your craft supplies, instructors, meals, swag and accommodations are included in the price!
I'm so excited for this event!  We will get the opportunity to craft with the best!  Hazel & Ruby, My Craft Channel and Doodlebug Designs are my special guests!  We will be making Christmas gifts, neighbor gifts, learning how to cook the BEST Christmas dinner and getting our gift wrapping done AHEAD of the season so that when December comes along we will be stress free and can enjoy the holidays!  
(This has been my Christmas wish for years!)
Think cozy fire, Christmas tunes, amazing projects and good women!

$75 down holds your spot with the balance due by October 9, 2014.

Chicken Enchilada Casserole

Ok...I'm not the BEST cook...I leave that to the experts like the Budget Gourmet Mom and fancy people like that...but I can make a mean Chicken Enchilada Casserole.  I made it for my friends at the June Retreat and they loved it, wanted the recipe and here it is!

First off, get your ingredients shown below plus a package of boneless/skinless chicken breasts and one yellow onion...this recipe will serve about 6 people 
(I always get an extra sour cream and a large size green enchilada sauce to double this)

Cook the chicken in a pot with one onion, chopped with salt & pepper to season
Add a little water to the chicken and put a lid on while it's cooking

Next...have you ever done this?  Take your cooked chicken and toss it into your KitchenAid and put the paddle on and it will shred your chicken!  My niece told me about this and I do it all the time now.

Next, make your sauce...
In a sauce pan, mix the Green Enchilada Sauce, one can of mild green chilies (hot if your brave), one pint of sour cream and 2 cups of cheese...I also add about 1/2 cup of the cooked chicken broth and add those onions that cooked with the chicken.  Mix together and watch the heat.  Slowly bring to a low boil and keep stirring.  Once it starts bubbling and the sauce is creamy and thick but not too thick, you are ready to layer...

Grab your dish and begin...

First, a thin layer of sauce

 Next, rip the tortillas into 4's...then layer to cover the bottom of the dish

Then add another layer of sauce 

 Add a layer of chicken

Then a layer of cheese

 Then start all over again until you've layered as high as your dish will off your final layer of tortillas with some sauce & cheese 

Now pop it into a 350 degree oven and bake about 45 minutes til it's bubbly and the cheese is all melted and golden

Let it cool and then eat!  
We add tortilla chips & salsa and a fresh salad to our dinner

 And there you go!  Chicken Enchilada Casserole!
Save your leftovers because this casserole is even BETTER the next day!

Happy Independence Day!

This blog post is by my of the proudest Americans I know...

Born in England, he then moved to the United States in 1992 and was finally able to apply for citizenship in 2012.  

This was a great day for our family!  

He writes the following...

This year, I've noticed how often people have said, "Happy Fourth of July". While I understand what they mean, I wish they'd say "Happy Independence Day". I guess I'm afraid that we may lose some of the meaning if we just refer to the date.

Only 238 years ago, men signed their death warrant on a piece of paper, as they declared the birth of a new nation. They did it because they had to. There was no liberty in their land, and they knew that without it, mankind's future would be dark indeed. Having lived in places where life, liberty and the pursuit of happiness are scarce, I am grateful that they made this stand. They did it for their families and neighbors, but it blessed the entire world. Mankind could literally see a beacon of hope to aspire to. For some, it was a pattern for them to try to establish in their homelands; for others, a destination to travel to.

I am grateful to have had the opportunity to travel to this land and choose to become a citizen. It took work and sacrifice, and no promises but an opportunity to pursue my dreams. So that's why I rarely wish someone a happy Fourth of July. Because it's Independence Day. May God bless us all to be able to keep it.
